Guacamole and Tiliapia

So, I haven't been posting much lately, the summer is flying by and I just cannot find a good balance to maintain this blog and get all my other stuff done. If you know a secret that I don't, please fill me in.
One thing that I always have time for is food. Last night I found the best guacamole recipe EVAH. I was watching the food network's Barefoot Contessa (Ina Garten) and she made the most amazing guac. We made it too and it was awesome.
Here is the recipe:

Guacamole

4 ripe Haas avocados
3 tablespoons freshly squeezed lemon juice (1 lemon)
8 dashes hot pepper sauce
1/2 cup small-diced red onion (1 small onion)
1 large garlic clove, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 medium tomato, seeded, and small-diced

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. Immediately add the lemon juice, hot pepper sauce, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

We had this with one of my all time favorite fish recipes:

Mexican Baked Tilapia

4-5 Tilapia Fillets (about 1 1/2 pounds, I get mine in the freezer section at Costco)
1 Cup of your favorite salsa (We love Jack's Special Salsa from Costco, it is divine)
1 cup shredded cheddar cheese
1 cup crushed tortilla chips

Preheat your oven to 400* and arrange Tilapia fillets in a casserole dish sprayed with pam. Top with Salsa, then Cheese, then Crunched up chips. Bake for 20 minutes. Top with avocados or guacamole and lime wedges when serving. YUM! My kids even like this one.
