Buttermilk muffins




I found this recipe on another blog and we tried them out this week. They were very moist and delicious, and healthy!


Buttermilk oatmeal muffins

1 cup regular oats
2 cups buttermilk (if you don't have buttermilk, just add 1 tsp vinegar for every cup of milk)
1 2/3 cups whole wheat flour
3/4 cup packed dark brown sugar
2 tablespoons vegetable oil
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, lightly beaten
2/3 cup dried blueberries (I used cranberries)
*Combine oats and buttermilk in a medium bowl, cover and refrigerate overnight.
Preheat oven to 350 degrees.
Add flour through fruit. Stir well to combine. Spoon 1/4 cup batter into each of 24 muffin cups coated with cooking spray. Bake at 350 for 15-17 minutes or until muffins spring back when touched slightly in center. Remove from pans immediately, place on a wire rack.

I love the new blog!!! I can't wait to try the muffins, and the baby names poll is fabulous (though I might have to veto "Amaya"--with my last name it sounds like you could be asking the question, "Am I a Pain?" My baby doesn't need that.

Sara, I didn't think of that, and no she won't need that kind of mockery.

Pam, I can't say that I have sworn off the nie, because I can't stop reading, but I don't want to subject anyone else to the torture.
