Grandma Roundy's bread

My Grandma Roundy made the best bread. She was known for it. Every week she would make
hundreds (ok, maybe 5) loaves. If you happened to be stopping by it was the sweetest smell there ever was to be in her house the moment that buzzer went off and hot bread came out of the oven.
Since she passed away a few years ago, my sister and I have talked about her bread recipe. She never wrote it down. We joke that she did it on purpose and took it to the grave. I regret not ever asking her to teach me how to make it before she died.
I have always loved to bake, but yeast breads always scared me. The last few months or so I have tried to become better at making bread and I have found several amazing bread recipes that are easy and delicious.
The first thing that I discovered is that you need good yeast. I found a great one at Kitchen Kneads in Ogden called Saf-Instant. You cannot screw this up, believe me, I have tried.
Once you have that down, the rest is fairly easy. Today I made Rosemary Bread. It has a light texture and crispy crust, and tastes a lot like the bread they serve at Macaroni Grill.

Rosemary Bread

1 1/2 teaspoons active dry yeast
1 cup water
3 tablespoons olive oil
1 1/2 teaspoons white sugar
1 1/2 teaspoons salt
1/4 teaspoon Italian seasoning
1/4 teaspoon ground black pepper
1 Tablespoon dried rosemary
2 1/2 cups bread flour


Add yeast and sugar to hot water, stir and wait 10 minutes. Add flour, salt oil and knead knead knead (I use my kitchenaid). Add the herbs and pepper and knead some more. Let rise an hour or so in an oiled, covered bowl in a warm place. Punch down, let rise another hour. Bake at 375 for 20-25 minutes until browned. Remove from oven and brush with olive oil and sprinkle with coarse salt. Yummy!

This will never be as good as my grandma's, but nothing ever will!

Yeah, this looks good. It also looks like the rosemary bread they serve at Johnny Carinos.

What would happen if I didn't use bread flour or the nice yeast? Maybe it wouldn't turn out as well??

This bread looks amazing girl! I'm still not very good at making bread, but I'll have to give this a try and see how it turns out.
